A Mouse in the Wall, a Good Recipe and the Trip that Wasn’t

I know, I know, I spelled tryptophan wrong yesterday.  I tried a number of possibilities but couldn’t get rid of that darn red underlining and too lazy to get a dictionary.  What’s that you say?  There’s a way to look it up on the laptop?  You do remember who you are dealing with, right?

Okay, as promised, here’s the recipe using Thursday’s leftovers.  It’s from Ree Drummond, Pioneer Woman.

Leftover Turkey and Swiss Panini

Prep Time:
5 Minutes
Cook Time:
5 Minutes
Difficulty:
Easy
Servings:
4

Ingredients

  • 1-1/2 cup Leftover Turkey, Shredded
  • 1/2 cup Leftover Cranberry Sauce
  • 1/4 cup Chopped Pecans
  • 2 Tablespoons Fig Or Apricot Jam
  • 4 Tablespoons Dijon Mustard
  • 8 slices (thick) Swiss Cheese
  • 8 slices Sourdough Or Other Bread
  • 8 Tablespoons Butter

Preparation Instructions

Spread all bread slices on one side with fig spread and Dijon. Top four slices with turkey.

Mix together cranberry sauce and pecans and spread over the turkey.

Top with slices of Swiss cheese.

Top with other four slices of bread with the jam/Dijon side down.

Spread both sides generously with softened butter and toast in the panini press (or in a heavy skillet, pressing with a spatula as they cook.)

Slice in half and serve.

Wait, I can do this, but not look up a word?  Yes.  I never said I wasn’t complicated!

Here are my notes after making it last year: use my cranberries because store bought aren’t tangy enough, and  don’t forget to flip.

We have a mouse in the front wall of the house.  Not quite sure whether it’s between the false brick wall and the real wall, or within the house wall somehow. I just know that it was gnawing furiously until I put peppermint essential oil as close to the sound as I could. It stopped within seconds and I haven’t heard it since.  I heard about a mouse deterrent that uses peppermint because they didn’t like it.  Guess so.

And, last but not least, the trip that wasn’t and yet we ended up next to the biggest draw on Black Friday: Best Buy.  Well, it wasn’t intentional, that’s for sure.  We were trying to shop small,  spending money at local small businesses and artisans. We’ll be  back there today because both of us, BOTH OF US, mind you, didn’t notice that the sale didn’t start until 11/29.

And, it wasn’t that we just wanted to cash in on the sale prices, either.  There was NO sale until today because the artisans had gathered their wares in a house on Grand!  So, literally, the sale wasn’t open until today.

Of course, we didn’t figure this out until we drove all the way over to St. Paul and parked in front of said house on Grand.  Since both of us looked at the info and neither of us caught the open date, no one was mad at anyone. “Hmmmm…” we said, ” well, there’s a Dunn Brothers  just down the street.  At least we can pick up a pound of coffee while we’re here.” and, so we did.

And, then, we thought, we’re close to Snelling  and there’s a store near Rosedale where  Lance had to check something out.  Off we go.

Snelling was closed so we detoured and then returned. As we neared Rosedale, the traffic picked up and Lance wondered if it was worth getting into the Black Friday stop and go.  Little did he know…

Well, it shouldn’t be too bad, we thought, since the store was in a separate building from the Rosedale Center.  We should be able to zip in and out, avoiding the bigger mess surrounding the shopping center.

There it is, straight ahead! Yay!

And then we see that it shares a driveway with the parking lot at Best Buy which is full to bursting with stop and go traffic both trying to leave and trying to find a space to park.  Cars are waiting in the aisles, just to get to the one road that leads out of the area.  We get stuck in that traffic just trying to get to our store.  And after Lance does his research in the store, the traffic knot is even more complex, with cars caught across lanes stopping traffic because of stopped traffic. And then the freezing rain starts.

Hap  Hap  Happy Holidays, Everybody!  That was the trip that wasn’t.  We’re going back today, to the actual opening of the artisan sale, but you can be sure we’ll avoid the Best Buy parking lot at Rosedale!

Drive safely and keep a smile on your face!

Love,

Janet
